Heirloom Tomato and Chicken Toss

Share

This Heirloom Tomato and Chicken Toss is a really tasty way to use up leftover roast chicken. It’s really healthy too. I always choose really ripe heirloom tomatoes when I make this salad. I love heirloom tomatoes for their weird and wonderful shapes and flavors. I always try to pick up a variety of different colors too if possible.

To make this salad couldn’t be easier – I whisk up a quick dressing of vinegar, olive oil, sugar, salt and pepper. Then I mix it with chicken, tomatoes, onion, basil, chives, parsley, and thyme together in one of my favorite salad bowls. Hey presto – a delicious salad ready in only 10 minutes!

To make this version of Heirloom Tomato and Chicken Toss, you will need the following:

I personally cut back on the tomatoes and used sun dried ones.

Parsley really stood out in the toss and overwhelmed the rest of the flavors.

Easy as one, two, three. I have been bringing this toss for lunch to work now almost every time we have some chicken leftovers lol

A hearty salad that is delicious although I am not a big fan of munching on tomatoes and chicken only so ill be sticking to the tangerine toss.

Eisley Bismark

Enjoyed the taste though I'm going to try making it with beef instead of chicken the second time around so it'll grip the flavors more.

Pamela Macgowan

Love the flavor in this meal though it couldve used a bit more salt.

Celia Strommen

I am a big fan of healthy food and this has topped the chart although do hold back on the sugar as it is not nescessary for the flavor of the dish and will make it healthier!

This is perfect to make even if you dont have any leftover chicken, you can simply buy some chicken and fry / boil it to prepare the salad as a side dish to your main course.

Paula Vavra

Really easy to make, literally just grab the ingredients and mix them together, going to have to make this any time we have some left over meat.

The Salad itself is good but the dressing for it was relatively weak i recommend adding more spices

Nadine Macnally

Perfect with a side of cheesy garlic bread, totally recommend it.
