This Heirloom Tomato and Chicken Toss is a really tasty way to use up leftover roast chicken. It’s really healthy too. I always choose really ripe heirloom tomatoes when I make this salad. I love heirloom tomatoes for their weird and wonderful shapes and flavors. I always try to pick up a variety of different colors too if possible.
To make this salad couldn’t be easier – I whisk up a quick dressing of vinegar, olive oil, sugar, salt and pepper. Then I mix it with chicken, tomatoes, onion, basil, chives, parsley, and thyme together in one of my favorite salad bowls. Hey presto – a delicious salad ready in only 10 minutes!
To make the Heirloom Tomato and Chicken Toss, you will need the following ingredients:
In a small bowl, mix the vinegar, olive oil, sugar, salt, and pepper with a whisk.
Place the chicken, tomatoes, onion, basil, chives, parsley, and thyme in a large salad bowl and toss well.
Add the dressing and mix well to coat.
Serve this salad with lots of freshly baked bread, drizzled with olive oil.
