Lazy Cabbage Rolls are my simple take on stuffed cabbage rolls. Stuffed cabbage is common in Eastern Europe and it is a great way to use nutrient-rich cabbage in your meals. Cabbage has so many health benefits and it is a great source of vitamins too. I love exploring cabbage based recipes.
I start these lazy cabbage rolls by blanching sliced cabbage leaves in boiling water. Next I make a filling from ground pork and turkey mixed with rice, onion, eggs and cabbage. I make the meat into patties and place them in a casserole dish before cooking up a tomato sauce. Pour the sauce over the meat patties and bake in the oven!
To make my Lazy Cabbage Rolls, you will need the following ingredients:
Preheat the oven to 425 °F and lightly grease two 9-inch casserole dish.
Place ¼-inch wide strips of cabbage in a heat proof bowl. Pour over boiling water and leave to soften for 10 minutes. Drain the water from the cabbage and squeeze the excess water with your hands.
Combine 1 pound each of ground turkey and ground pork with the drained cabbage and 4 cups of cooked rice in a large mixing bowl. Place ½ a grated onion into the meat mixture. Add 2 eggs, 1 teaspoon of all-purpose seasoning, ½ a teaspoon of black pepper, 2 teaspoons of salt, and 2 tablespoons of finely chopped parsley. Mix well.
Shape the meat mixture into ½ cup oval patties with your hands. Arrange them in the prepared casserole dish.
Heat 1 tablespoon of oil and 3 tablespoons of butter in a large saucepan over medium-high heat. Add ½ a diced onion and sauté for 5 minutes, stirring occasionally until soft.
Add julienned carrot to the onion and cook for 3 minutes more before adding 2 cups of marinara and 3 cups of hot water. Bring the sauce to a boil and add ¼ teaspoon of salt and ¼ teaspoon of all-purpose seasoning.
Pour the sauce over the meat patties and cover the baking dish with foil. Bake in the oven for 40 minutes until cooked through.
Serve on plates with sour cream or Greek yogurt and enjoy!
