To make Low Carb Mint and Chocolate Chip Ice Cream, you will need the following ingredients:
Add the room temperature coconut milk, avocado, vanilla extract, peppermint extract, lemon juice, salt and sweetener to a blender and blend until creamy smooth. Adjust amount of sweetness and mint according to your preference.
Stir in the chocolate chips.
Place in a sealable container and freeze for about 2 hours, until set
Allow to thaw for 15-20 minutes before serving.
