This recipe for Moroccan Kefta Kebab is inspired by a North African vacation I took about 10 years ago. These delicious ground meat skewers are packed full of flavors like cumin, paprika, minced onion, coriander, mint, and parsley. Serve these with salad and pita bread.
To make these skewers, start by mixing all of the ingredients together in a large mixing bowl and cover. As the mixture chills in the refrigerator, soak bamboo skewers in water. To make the kebabs, take small amounts of the meat mixture and shape them into cylinders or sausage shapes. Mold the meat onto the bamboo skewers. Grill the kefta kebabs and serve immediately, or wrap in foil to keep warm.
To make my version of Moroccan Kefta Kebab, you will need the following ingredients:
Mix 1 pound ground meat with 3 ounces of ground beef or lamb fat, 1 medium chopped onion, 2 teaspoons of paprika, 1 teaspoon of cumin, 1 teaspoon of salt,
¼ teaspoon of pepper, ⅛ teaspoon of cayenne pepper, ¼ cup of chopped fresh parsley, ¼ cup of chopped fresh cilantro, 1 teaspoon of ground cinnamon, and 1 tablespoon of chopped fresh mint leaves.
Place the mixture in the refrigerator to chill.
As the meat chills, soak bamboo skewers in a bowl of water.
Heat your grill or grill pan.
Take small amounts of the kefta mixture at a time and shape into cylinders or sausage shapes. Mold the meat onto the skewer, squeezing it so that it stays on the skewer.
Cook the kebabs on the grill for 5 minutes on each side. Watch the kebabs as they cook so they do not dry out.
Serve immediately with salad and couscous or pita bread.
