Often people think that quick and easy means fat and unhealthy but that’s not the case here. You’ll get your protein, carbohydrates and vegetables, all in one meal, made in just one pot! This is a recipe especially for kitchen newbies!
To make One Pot Chicken and Pumpkin Rice, you will need the following ingredients:
Preheat oven to 350 ºF.
Season chicken with salt, pepper and sweet paprika on both sides.
In a large skillet over medium heat, heat olive oil. Add chicken pieces and cook until no longer pink on the inside. Transfer to a plate to keep warm.
Add remaining olive oil and onions to the skillet and cook for about 2 minutes.
Add garlic, ginger, thyme and pumpkin and cook for another 10 minutes.
Add rice and mix everything together.
Stir in chicken or vegetable stock.
Transfer the skillet to the preheated oven and cook for about 30 minutes.
Remove from the oven and add chicken pieces then cook for a further 10 minutes until the rice is completely cooked. Add additional water or stock as needed.
Serve and enjoy immediately.
