This Shaved Brussels Sprout Salad is great as a side dish or as a super healthy main meal. Brussels sprouts are one of the best veggies in terms of nutritional benefits. They contain iron which makes red blood cells and manganese which helps to break down the food we eat. They are also high in Vitamins A, C and K.
I start by whisking up a dressing from white wine vinegar, lemon juice, shallot and olive oil. Then I marinate shaved Brussels sprouts in the dressing for 30 minutes. Just before serving, I mix through sliced apple, dried cranberries and hazelnuts. To serve, crumble over goat cheese. Enjoy!
To make the Shaved Brussels Sprout Salad, you will need the following ingredients:
In a small bowl whisk together 4 tablespoons of olive oil, 2 tablespoons of white wine vinegar, 3 tablespoons of freshly squeezed lemon juice, 1 chopped small shallot, 4 tablespoons of olive oil, 1 teaspoon of salt and ¼ teaspoon of black pepper.
Place the Brussels sprout shavings in a large salad bowl. Pour over the dressing and toss well to coat evenly. Cover the bowl and marinate for 30 minutes.
Mix through a thinly sliced apple, ½ a cup of dried cranberries and ½ a cup of lightly roasted walnuts or hazelnuts. Toss gently.
Serve garnished with ⅔ cup of crumbled goat cheese.
