
Looking for a delightful side to your holiday meal? This Brussels Sprouts au Gratin has been a holiday staple in my family ever since a friend shared her recipe with me. Made with pure indulgence of Gruyère cheese, butter, and cream, these Brussels sprouts are truly mouthwateringly delicious.
You’ll start by parboiling the Brussels sprouts until crisp-tender, about 5 minutes. Then, using a large saucepan, cook the chopped garlic cloves in a few tablespoons of butter until fragrant. Add in the flour and cook, whisking constantly for a minute, creating a blond roux. Still whisking, slowly pour in the half-and-half and cook until thickened. I use half-and-half instead of heavy cream to cut down on the fat because there’s already plenty of that in the cheese. Next, remove the saucepan from heat and stir in the cheese, then fold in the Brussels sprouts. Pour the mixture into a baking dish and bake until golden and bubbly. Let cool for 5 minutes before serving.
