Brussels Sprouts au Gratin recipe

Looking for a delightful side to your holiday meal? This Brussels Sprouts au Gratin has been a holiday staple in my family ever since a friend shared her recipe with me. Made with pure indulgence of Gruyère cheese, butter, and cream, these Brussels sprouts are truly mouthwateringly delicious.

You’ll start by parboiling the Brussels sprouts until crisp-tender, about 5 minutes. Then, using a large saucepan, cook the chopped garlic cloves in a few tablespoons of butter until fragrant. Add in the flour and cook, whisking constantly for a minute, creating a blond roux. Still whisking, slowly pour in the half-and-half and cook until thickened. I use half-and-half instead of heavy cream to cut down on the fat because there’s already plenty of that in the cheese. Next, remove the saucepan from heat and stir in the cheese, then fold in the Brussels sprouts. Pour the mixture into a baking dish and bake until golden and bubbly. Let cool for 5 minutes before serving.

Steps to make Brussels Sprouts au Gratin

    Heat oven and prepare baking dish

    Preheat the oven to 375 °F. Lightly grease a 3-quart baking dish.

    Parboil Brussels sprouts

    Bring a large pot of salted water to a boil and add 3 pounds Brussels sprouts. Boil until crisp-tender, 5-8 minutes. Drain and run under cold water.

    Pat dry

    Drain the Brussels sprouts and spread in a single layer on a paper towel; pat dry.

    Make roux

    In a large saucepan over medium heat, cook 3 chopped garlic cloves in 2 tablespoons butter until fragrant, 1 minute. Sprinkle with ¼ cup flour and cook, whisking, for 1 minute.

    Add half-and-half

    Slowly whisk in 2 cups half-and-half. Simmer, whisking, until thickened, 6-7 minutes.

    Add cheese

    Remove the saucepan from heat and whisk in 6 ounces (about 1 ¼ cups) grated Gruyère cheese.

    Add Brussels sprouts

    Fold in the Brussels sprouts and season with salt and freshly ground black pepper to taste.

    Transfer to the prepared baking dish and top with the remaining Gruyère cheese (about ¾ cup).
