Add this Spinach Pear and Feta Salad to your Thanksgiving menu this year! It is light, crunchy, and flavorful and will provide a splash of color on your plate and balance out the rich side dishes. Not only that, it is simple to make and takes just 5 minutes to put together.
Prepare the pears by washing and slicing them thinly. Then, toss them with orange juice. This step is optional but prevents the pears from turning brown. Now, the dressing. Making a jar dressing requires just the following: add vinegar, sweetener of choice, Dijon mustard, sea salt, black pepper, and extra-virgin olive oil into your mason jar, screw on the lid, and shake vigorously until emulsified. If you don’t have pomegranate molasses on hand, maple syrup or honey will do just fine. Finally, combine the fresh spinach, pear slices, walnuts, pomegranate arils, and sliced onions in a large salad bowl and spoon the prepared dressing over the salad. Toss gently to coat and serve right away. Easy and delicious!
To make the Spinach Pear and Feta Salad, you will need the following ingredients:
To a small bowl, add ½ cup orange juice and the sliced pears. Toss gently to coat. Set aside.
In a jar, combine ¼ cup balsamic vinegar, 1 teaspoon pomegranate molasses, 2 teaspoons Dijon mustard, ½ teaspoon sea salt, freshly ground black pepper to taste, ¼ cup extra-virgin olive oil, and 1 minced garlic clove if using. Screw on the lid and shake vigorously until emulsified.
In a large salad bowl, combine 10 ounces fresh baby spinach, ½ cup chopped walnuts, ½ cup crumbled feta cheese, ¼ cup sliced green onions, ¼ cup pomegranate arils, and the pear slices
Just before serving, spoon the prepared dressing over the salad and toss to coat.
Serve right away.
