I love the deliciously smooth consistency poured through this soup and with the simple addition of frizzled leeks and capers you can elevate your dish from a simple soup to a fine dining bowl. Creamy, salty and crispy delicious, you’ll have to make two pots of this one!

    In a large pot over medium heat, heat oil and melt butter and add the sliced leeks. Saute, stirring a few times, for about 8-10 minutes until very soft and translucent.
