Ingredients

1 tbsp Olive oil extra virgin
1 tbsp Unsalted butter
2 Leek medium, white and pale green parts only, tough outer layer removed, washed and thinly sliced, reserve a 2-inch length piece of one leek half for frying
8 ounces Potatoes diced
1 Cauliflower large, stalk trimmed and cut into small florets
7 cups Chicken broth low-sodium
1 tbsp Lime juice freshly squeezed
1 tsp Dijon mustard
¼ tsp Nutmeg freshly grated
¼ cup Parmesan cheese grated
1 pinch Cayenne pepper
Kosher Salt to taste
Black pepper freshly ground, to taste
For the Garnish
1/2 cup Olive oil or vegetable oil
2 tbsp Drained capers patted dry
Sea salt kosher

This Simple Cauliflower Soup with Frizzled Leeks and Capers has always been a favorite of mine. I love the deliciously smooth consistency poured through this soup and with the simple addition of frizzled leeks and capers you can elevate your dish from a simple soup to a fine dining bowl. Creamy, salty and crispy delicious, you’ll have to make two pots of this one!

Sauté leeks

In a large pot over medium heat, heat oil and melt butter and add the sliced leeks. Saute, stirring a few times, for about 8-10 minutes until very soft and translucent.

Add potato

Add the potato dices and sauté for another 2-3 minutes, stirring every now and again.

Add cauliflower and broth

Add the cauliflower and pour in chicken broth. Bring to a boil.

Cook soup

Once boiling, reduce heat and simmer on low heat, uncovered, for about 20-25 minutes until the vegetables are well cooked.

Blend soup

Once the vegetables are cooked, transfer soup to a food processor and blend until extremely smooth. Return to the pot.

Season soup

Over low heat, reheat soup and add the lime juice, Dijon mustard, nutmeg, Parmigiano-reggiano cheese, and a pinch of cayenne pepper. Season with salt and pepper, to taste.

Prepare garnishing

Flatten the reserved leek on a cutting board and use a sharp knife to slice into thin strips, lengthwise. Set capers aside.

Fry leeks

In a small saucepan, heat oil to 360 °F. Once oil is hot, fry leek in small batches for about 10-20 seconds while continuously stirring until golden brown and evenly fried. Transfer to a plate lined with paper towel and repeat in batches with remaining leek slices.

Season leeks

Lightly sprinkle leeks with salt and set aside to cool until extremely crispy.

Fry capers

Repeat frying steps with the capers, frying each batch for a few seconds longer than the leeks until lightly browned.

Serve

Enjoy soup served hot and garnish each bowl with small handfuls of fried leeks and a few crispy capers.
