1 Carrots medium-sized, thinly sliced
1 Beets medium-sized, red, thinly sliced
Olive oil as needed
Salt to taste
Black pepper to taste
For the Soup
1 Onion medium sized, finely chopped
2 cloves Garlic minced
4 Potatoes medium-sized, peeled and diced
1 tbsp Olive oil
1 liter Vegetable broth
150 g Wild garlic plus 6 tbsp for garnish
100 g Spinach
2 tbsp Lemon juice
6 tbsp Almonds chopped, for garnish
Salt to taste
Black pepper to taste

This Creamy Wild Garlic Soup with Crispy Veggie Chips is so good there aren’t good enough words to explain it, you just have to try it! A creamy potato soup with onion, garlic and wild garlic, vegetable broth and spinach all mixed together to really enhance the flavor of the wild garlic. I have recently discovered the flavor of wild garlic and I absolutely love it.

I haven’t even touched on the crispy veggie chips but they’re to die for and I always make sure to bake some extra for a sneaky snack for movie night! This recipe includes elevated garnishing ideas for you to use and enjoy!

Steps to make Creamy Wild Garlic Soup with Veggie Chips

Preheat the oven

Preheat the oven to 400 °F.

Season vegetables

Arrange the carrot slices from 1 carrot and beet slices from 1 red beet on 2 separate baking sheets and drizzle with some olive oil and generous sprinkles of salt and black pepper. Toss to coat well.

Bake beets

Bake the red beet slices in the preheated oven for about 17-20 minutes until crispy and crunchy. Thin slices need less baking time.

Bake carrots

Bake the carrot slices in the preheated oven for about 10-12 minutes until crispy and crunchy. Thin slices need less baking time.

Sauté onion and garlic

In a large skillet over medium heat, heat 1 tablespoon of oil and add 1 finely chopped onion and 2 finely chopped garlic cloves. Sauté for about 2 minutes until fragrant.

Add potatoes and broth

Add 4 peeled and chopped potatoes along with 1 liter of vegetable broth and bring to a simmer for about 15 minutes.

Add wild garlic and spinach

Add 150 grams of wild garlic and 100 grams of fresh spinach leaves and simmer for another 5 minutes.

Blend soup

Once ready, transfer the soup ingredients to a food processor and pulse until blended and smooth.

Stir in 2 tablespoons of lemon juice and season with salt and pepper.

Serve

Divide soup between serving bowls and garnish each with some crispy veggie chips, chopped wild garlic, and chopped almonds.
