Avocado Mac and Cheese
This Avocado Mac and Cheese is another winning recipe when it comes to encouraging my children to include vegetables into their meals. Prepare an extra cheesy and double creamy sauce to be combined with mashed avocados for a real feel good pasta dish.
Everyone loves pasta night and this recipe is definitely one of my personal favorite options.
To make Avocado Mac and Cheese, you will need the following ingredients:
Steps to make Avocado Mac and Cheese
1 | Mash avocados | 5 |
In a medium bowl, mash 2 large avocados with 2 teaspoons of lemon juice, until smooth. | ||

In a large saucepan, melt ½ cup of unsalted butter. | ||

Add ½ cup of all-purpose flour and cook for about 2-3 minutes until slightly golden. | ||
4 | Add milk and cook sauce | 5 |
Add milk and whisk to combined. Season with salt and pepper to taste and then simmer for about 5 minutes until sauce has thickened. | ||
5 | Combine avocado and cheeses | 3 |
Remove from heat and add 3½ cups of shredded white Cheddar cheese, ½ cup of grated Parmesan cheese, and mashed avocado. Mix through until well combined. | ||
