2 tbsp Canola oil
3 cups fresh Mushrooms sliced
½ cup Onion chopped
1 tbsp All-purpose flour
1 cup Chicken stock unsalted
2 tbsp Heavy cream

⅜ tsp Kosher Salt
¼ cup Panko breadcrumbs whole wheat

The Best Healthy Green Bean Casserole is a perfect side dish addition to your menu, and for those who love their veggies, I’d say it’s good enough as a whole dinner with high fat and protein. I use French green beans (also called Haricots Verts) and sauté them with mushrooms and onions. I then add flour, stock and heavy cream to a casserole dish and top with panko breadcrumbs and grated Parmesan. Bake to perfection.

Steps to make The Best Healthy Green Bean Casserole

Blanch beans

In a saucepan, add 12 ounces of beans to some boiling water and boil for 8 minutes until blanched. Transfer to an 11x7-inch baking dish.

Cook mushrooms and onions

Meanwhile, in a large skillet over medium-high heat, heat 2 tablespoons of canola oil and add 3 cups of sliced mushrooms and ½ cup of chopped onions. Cook for 6-8 minutes until browned.

Add flour

Add 1 tablespoon of all-purpose flour and cook for about 1 minute while continuously stirring.

Add stock

Pour in 1 cup of unsalted chicken stock, 2 tablespoons of heavy cream, ½ teaspoon of black pepper and ⅜ teaspoon of kosher salt. Cook for about 1-3 minutes until the sauce is thickened and smooth.

Prepare for baking

Pour the prepared sauce over the beans and top with sprinkles of panko bread crumbs and grated Parmesan cheese. Spray over with some cooking spray.

Broil

Broil for about 2-3 minutes until golden brown on top.
