1 tbsp Tomato paste
17.6 oz Tomato passata or strained tomatoes
1 tbsp Italian herb seasoning
1 Zucchini cut into 0.1-inch slices
1 Eggplants cut into 0.1-inch slices
3 Tomatoes cut into 0.1-inch slices
1 cup Vegan Mozzarella optional
1 cup Vegan Cheese grated
Salt to taste
Black pepper to taste
For garnish:

This delicious French-inspired veggie stew recipe couldn’t be easier to make. First, prepare the tomato sauce and pour it into the round baking dish. Arrange the sliced veggies on top and scatter with the vegan cheese. Cover the dish with foil and bake in the preheated oven for 30 minutes, then uncover and continue to bake for another 15 minutes. Serve garnished with vegan Parmesan and basil leaves. Super easy and so delicious!

Steps to make Best Vegan Ratatouille

Preheat oven

Preheat the oven to 400 °F and prepare a round 9-inch baking dish.

Sauté onions

In a large skillet over medium heat, heat 1-2 tablespoons olive oil and add 1 chopped onion. Sauté for 2-3 minutes until translucent.

Add garlic

Add 3 minced garlic cloves and cook for 1 minute more.

Add tomatoes, salt, pepper and herbs

Add 1 tablespoon tomato paste and 17.6 ounces strained tomatoes or passata. Season with salt and black pepper to taste and add 1 tablespoon dried Italian herbs. Cover and simmer for 5 minutes.

Assemble

Pour the tomato sauce into the prepared baking dish. Arrange the slices of zucchini, eggplant, and tomatoes alternately on top of the sauce. Scatter vegan mini mozzarella balls and grated cheese over the vegetables.

Cover the dish with foil and bake for about 30 minutes. Then uncover and bake for 15 minutes more until the veggies are cooked and lightly browned.

Serve garnished with vegan Parmesan and basil leaves.
