1 tbsp Olive oil
1 Zucchini large , diced
1 Onion diced
1 Red bell pepper diced
1 tsp Dried basil
½ tsp Black pepper
½ tsp Salt
1 cup part-skim Mozzarella shredded
1 cup Half-and-half cream

This Cheese Tortellini Bake with Zucchini is a delicious light summer dinner that you can whip up and have on the table in only 30 minutes. Made with store cupboard ingredients, you and your dinner guests will love this dish. 

It’s super easy to make this tortellini bake too. Start by cooking tortellini according to package directions. Cook zucchini, onion, red pepper, and seasonings in a skillet until crisp-tender. Drain tortellini and combine all ingredients in a baking dish. Bake until heated through and serve with salad or garlic bread.

Preheat the oven to 375 °F.

Cook tortellini

Cook tortellini according to the package directions.

Heat 1 tablespoon of oil in a skillet.

Cook 1 large diced zucchini, 1 diced onion, 1 diced sweet red pepper, 1 teaspoon of dried basil, and ½ a teaspoon each of salt and pepper until the vegetables are crisp-tender.

Drain tortellini

Drain cooked tortellini.

Combine ingredients

Combine the vegetable mixture, mozzarella, cooked tortellini and cream in a 1 ½-quart baking dish.

Bake in the preheated oven for about 20 minutes until cooked through.

Serve immediately with salad and garlic bread on the side.
