With this recipe, you start by making the curry base in a skillet. Once the curry base is made, add it to a bowl of your slow cooker. Then add the chicken, coconut milk, and a good pinch of salt. Cover and cook low and slow until the chicken is extra tender and juicy. Top each bowl of chicken curry with fresh cilantro leaves and serve!

Make curry base: Cook onions

In a skillet over medium heat, heat 2 tablespoons vegetable oil and add 2 finely chopped onions. Cook, stirring occasionally, until the onions are soft and translucent, about 5 minutes.

Add garlic and ginger

Add 1 tablespoon minced garlic and ½ tablespoon grated ginger and cook, stirring, about 30 seconds.

Add tomato paste

Add in ¼ cup tomato paste and cook, stirring, about 1 minute

Add curry powder and kashmiri pepper

Add in 2 tablespoons curry powder and 2 teaspoons kashmiri red chili powder and cook, stirring, for another 30 seconds until fragrant.

Add to slow cooker

To the bowl of a slow cooker, add the prepared curry base, chicken pieces, 1 can coconut milk, and a good pinch of salt. Mix to combine.

Cover and cook on high for 3 hours or on low for 5 hours.
