To make the Slow Cooker Apricot Chicken, you will need the following ingredients:
In a large skillet over medium heat, heat 1 tablespoon olive oil. Sprinkle the chicken thighs on both sides with salt and sear the thighs for 2 minutes per side.
Transfer the chicken to the bowl of a slow cooker
To the same skillet, add the remaining 1 tablespoon oil and add 1 chopped onion and 4 sliced garlic cloves. Sauté the onions and garlic, about 3 minutes.
Add 2 pounds pitted apricots and sauté about 4 minutes until softened.
Add ½ cup sugar and mix to combine. Taste and add more sugar if needed.
Add ½ cup chicken stock, ¼ cup of sweet chili sauce, ½ teaspoon paprika, and ¼ teaspoon black pepper. Taste and add more chili sauce if you wish.
Pour the sauce over the chicken thighs.
Cover and cook on high for 2 hours and 30 minutes or on low for 5 hours.
Towards the end of cooking time, in a small bowl, mix 1 tablespoon cornstarch with 1 tablespoon water until smooth.
Add the cornstarch mixture to the slow cooker and mix to combine. Cover and let the sauce thicken, about 5 minutes. Then stir again.
