Deopbap is a Korean rice dish where rice is placed at the bottom of a bowl and topped with your favorite toppings. In this case, scrambled egg, sautéed kimchi, tuna, crunchy seaweed, mayo, and teriyaki sauce.

Start by mixing tuna with mayo and season with salt and pepper to taste. Place cooked rice in a serving bowl. Cook eggs in a small non-stick pan over medium heat. Stir to break up the eggs and cook until scrambled. Top the hot rice with scrambled eggs. Add kimchi to the same pan and sauté for 2 minutes until the juices release. Place cooked kimchi over eggs in the rice bowl. Top with tuna mayo and sprinkle with seaweed. Drizzle mayo and teriyaki sauce over the top before serving.

Steps to make Korean Tuna Mayo Deopbap

Prepare tuna mayo

Combine 1 can of tuna with 2 tablespoons of mayo in a small bowl. Mix well and season with salt and pepper to taste.

Place rice in a bowl

Place 1 ½ cups of cooked rice in the bottom of a serving bowl.

Heat oil

Heat 1 teaspoon of cooking oil in a small non-stick pan over medium heat.

Scramble eggs

Add 2 whisked eggs to the pan. Stir to break up the eggs and cook for about 2 minutes until they are soft and scrambled. Pile the scrambled eggs on the hot rice.

Heat kimchi

Heat the remaining oil in the same pan over medium heat. Add ⅓ cup of kimchi and sauté for 2 minutes until the juices start to release. Top the eggs with the kimchi.

Add tuna mayo

Place the tuna mayo on top of the kimchi. Drizzle with remaining mayo and teriyaki and garnish with chopped seaweed.
