1 (15-oz) can Chickpeas unsalted, drained
1/2 cup Kimchi
1/4 cup Tahini
3 tbsp Water
2 tbsp Sesame oil toasted
1 tbsp Rice vinegar
1/2 tsp Kosher Salt
1 clove Garlic chopped
For serving:
2 tbsp Kimchi chopped
1 1/2 tbsp Green onion sliced

    This Kimchi-Sesame Hummus recipe is a fun new twist on a classic Middle Eastern appetizer. Classic is great (you might put together a hummus masabacha), but sometimes I like switching things up. And this Korean-inspired hummus just fits the bill. In this recipe, kimchi gets blended into the hummus to add a flavorful kick and probiotic goodness. It is delicious, healthy, and beyond simple to make.

    Combine all ingredients in a food processor and blend until smooth. Feel free to adjust the hummus by adding more garlic, rice vinegar, kimchi or salt as needed. Serve the hummus topped with a little chopped kimchi, sliced green onions, and lots of raw vegetables, or just keep it in an airtight container in the fridge for snacking. Enjoy!

    In a food processor, combine 1 can drained chickpeas, ½ cup kimchi, ¼ cup tahini, 3 tablespoons water, 2 tablespoons toasted sesame oil, 1 tablespoon rice vinegar, ½ teaspoon kosher salt, and 1 chopped garlic clove.

    Process for about 2 minutes until well blended.

    To serve, spoon the hummus into a bowl and top with 2 tablespoons chopped kimchi and 1 ½ tablespoons sliced green onions. Enjoy with fresh veggies, pitas, or crackers.
