- 3 Potatoesmedium sized

- 1-2 tsp Pav bhaji masala powderto taste

- 2 tbsp Cilantroleaves , finely chopped
- 1 tbsp Buttermelted or vegan butter
- ⅛ tsp Red chili powder
- ¼ tsp Chaat masala
- 6 Butter rollsor pav or bun
For garnish and side:
- ¼ cup Onionfinely chopped
- 1½ tbsp Cilantroleaves, finely chopped
- Butteror vegan butter, as needed

Pav Bhaji – Indian curry
This Pav Bhaji – Indian curry is one of my favorite Indian-inspired dishes. This recipe is a super delicious curry which is prepared using mixed vegetables and is served with homemade warm rolls, known as pav, which are toasted in butter. It’s easy to make this recipe vegan by using a vegan alternative to butter.
To make this, start by cooking potatoes and vegetables. Sauté onions and garlic and season using cumin seeds, pav bhaji masala, and chili powder. Add water to make the sauce and cook. To make the toasted bread rolls, combine butter with chili powder and chaat masala. Brush the buns with the butter mixture and toast on a hot pan. Serve all parts of the dish on a serving platter and enjoy.
