½ tsp Pumpkin pie spice or additional cinnamon
1 ½ cups old fashioned Rolled oats or 1 cup oat flour
¾ cup Sweetener that measures like
½ tsp Cinnamon
¼ tsp Salt
½ tsp Baking powder
½ tsp Baking soda
¼ cup Applesauce unsweetened
1 Egg whites large
1 tbsp Chocolate chips, for topping

Steps to make Skinny Pumpkin Protein Cookies

    Preheat oven and prepare baking sheet

    Preheat oven to 350 °F and line a baking sheet with baking parchment paper.

    Blend oats

    If using oats, place in a food processor and blend until a flour-like consistency is formed.

    Combine dry ingredients

    In a bowl, combine the protein powder, blended oats or oat flour, sweetener, cinnamon, salt, baking powder and baking soda together.

    Create a well in the center and add the canned pumpkin, applesauce and egg white and mix to combine. Stir well to form a batter.

    Portion ⅛ of the dough mixture, per cookie, onto the prepared baking sheet. Flatten out slightly and top with chocolate chips, if you wish.
