Cozy, with fragrant spices and a little heat, this chicken soup is made with flavorful Thai curry paste, chicken broth, coconut milk, and lime juice. Toss in plenty of delicious rice noodles and sprinkle with fresh cilantro and scallions, it’s hard to beat a good soup.   Â
Start by sautĂ©ing the shallots and ginger. Add the curry paste and cook until fragrant, about 1 minute. Then add the chicken broth, coconut milk, fish sauce, sugar, lime juice, and ground turmeric. Bring to a simmer and cook, uncovered, for 5 minutes. While the soup is simmering, cook the rice noodles. To serve, divide the rice noodles between bowls and ladle the soup over. Top each bowl with scallions and cilantro, and serve with Sriracha and lime wedges for a little extra zing. Enjoy!Â
