- 3 oz Cheeseshredded
- 1 tbsp Parsleychopped

Potato Egg Nest
This Potato Egg Nest recipe is one of my favorite Easter breakfast dishes. These nests look so cute with their yellow egg yolk centers. Whenever I cook potatoes around Easter time, I always make sure I cook a bit extra so that I can make these delicious nests.
Take cooked potatoes and mash them, season with salt and pepper. Add bread crumbs, bacon, parsley and cheese and shape into potato patties. Using a small glass, make an indent in the center of each patty. Sprinkle with remaining bread crumbs and cheese. Place an egg yolk in the center of each patty and bake in the oven. Simple and delicious!

I added bacon bits ontop of mine because I wanted something on the top to make it look a bit more decorated.
Hubby really enjoyed this even though he said it isn't enough to just make one, he thought next time we'll serve this as a side dish with some lemon chicken :)

Took a long time to make this but it was fine to the taste, just needed a bit more salt in my opinion.
