14 oz Potatoes peeled and cooked
4 tbsp Bread crumbs
3 tbsp Bacon bits
3 oz Cheese shredded
1 tbsp Parsley chopped
Salt to taste
Black pepper to taste
4 Egg yolks
Bread crumbs to sprinkle on top
Parsley to garnish

This Potato Egg Nest recipe is one of my favorite Easter breakfast dishes. These nests look so cute with their yellow egg yolk centers. Whenever I cook potatoes around Easter time, I always make sure I cook a bit extra so that I can make these delicious nests.

Take cooked potatoes and mash them, season with salt and pepper. Add bread crumbs, bacon, parsley and cheese and shape into potato patties. Using a small glass, make an indent in the center of each patty. Sprinkle with remaining bread crumbs and cheese. Place an egg yolk in the center of each patty and bake in the oven. Simple and delicious!

Steps to make Potato Egg Nest

Heat the oven and line a baking sheet

Preheat the oven to 350 °F. Line a baking sheet with parchment paper.

Mash potatoes

Place 14 ounces of potatoes in a bowl. Mash them and season to taste with salt and pepper.

Add bread crumbs, bacon, parsley and cheese

Add 4 tablespoons of bread crumbs, 3 tablespoons of bacon,1 tablespoon of parsley and half of the cheese (1½ oz) to the mashed potato.

Make potato patties

Divide the potato mixture in four and shape into patties. Take a small glass and press it into the center of each patty to make an indent.

Add bread crumbs

Sprinkle a bread crumb garnish on top.

Place cheese in the indents

Add the remaining cheese to the indents in each potato patty.

Add egg yolks

Place an egg yolk in the center of each of the holes.

Bake

Bake in the oven for about 15 minutes.

Serve

Serve garnished with parsley.
