2 Eggs beaten
1 cup Carrots grated, 2 medium carrots
½ cup Milk
1 cup Brown sugar
1 ½ cups All-purpose flour
1 tsp Baking powder
1 tsp Baking soda
1 tsp Cinnamon
¼ tsp Salt
For cream cheese frosting:
¼ cup Butter softened
¼ cup + ½ tbsp (63g) Cream Cheese full-fat, total, softened
2 ½ cups Powdered sugar
¼ tsp Vanilla
pinch Salt
2 tbsp Heavy cream or whipping cream

We can’t get enough of these Easy Carrot Cake Muffins! Sweetened with brown sugar and flavored with cinnamon, these muffins pack in a healthy dose of carrots. Not only do the carrots bring extra sweetness and moisture, but they also add more flavor and nutrients to the muffins. For best results, please use freshly grated carrots. Top each muffin with a homemade cream cheese frosting for a beautiful presentation. 

This muffin recipe is pretty easy to make, and you can whip it up in 30 minutes. While the oven preheats, grease and flour a muffin pan and make the batter. In a large bowl, mix the wet ingredients. In a medium bowl, combine the sugar, flour, baking powder, baking soda, cinnamon, and a pinch of salt. Slowly add the dry ingredients to the wet ingredients, stirring until just combined. Scoop the batter into the prepared muffin pan and transfer to the oven. Bake until browned and a cake tester inserted into the center comes out clean. While the muffins cool, it’s time to make the frosting by beating the ingredients together. Pipe or spoon the frosting over the cooled muffins, and serve!

Heat oven and prepare muffin pan

Preheat the oven to 400 °F and grease and flour a medium-sized muffin pan.

Mix wet ingredients

In a large bowl, whisk together ½ cup vegetable oil, 2 beaten eggs, 1 cup grated carrots and ½ cup milk.

Mix dry ingredients

In a medium bowl, whisk together 1 cup sugar, 1 ½ cups flour, 1 teaspoon baking powder, 1 teaspoon baking soda, 1 teaspoon cinnamon, and ¼ teaspoon salt.

Combine wet and dry ingredients

Stir the dry ingredients into the wet ingredients until just combined.

Fill muffin pan

Spoon the batter into the prepared muffin pan.

Bake for about 20 minutes or until a toothpick inserted in the center comes out clean.

Cool

Cool completely before frosting

Prepare cream cheese frosting

In a medium bowl, beat together ¼ cup butter and ¼ cup plus ½ tablespoon cream cheese until creamy and smooth, about 1 minute. Add in 2 ½ cups powdered sugar a little at a time. While beating, add a pinch of salt and 2 tablespoons of cream and beat for about 3 minutes until light and fluffy.
