I think the queso fresco in this recipe makes the cookies taste light and fresh. Using cheese is not a new phenomenon in baking, but I encourage people to move away from traditional cream cheese in favor of its lighter Mexican cousin: queso fresco.

Start these cookies by mixing the dry ingredients together. Beat some sugar, butter, and queso fresco together in a bowl. Add egg and vanilla extract and mix well. Gradually incorporate the flour mixture with the wet ingredients. Once your dough is ready, make small balls (approx one tablespoon). Place the cookies on baking sheets and bake.

Heat oven and prepare 2 baking sheets

Preheat oven to 350 °F and line 2 baking sheets with parchment paper.

In a large bowl, mix 2 ½ cups of flour, 1 teaspoon of baking soda, ½ a teaspoon of baking powder and ½ a teaspoon of salt.

Beat sugar, butter, and queso fresco

In a separate bowl, beat 1 ½ cups of sugar, ¾ cup of butter ¾ cup of queso fresco together.

Beat in egg

Add one egg to the bowl and beat until combined.

Add vanilla extract

Add one tablespoon of vanilla extract and mix well.

Add dry ingredients to wet

Gradually mix in one cup of flour mixture at a time, until all the ingredients are fully combined.

Shape the cookies

Roll tablespoonfuls of cookie dough into small balls and place them on baking sheets about 1 inch apart.

Place the baking sheets in the oven and bake for 9-11 minutes.

Leave the cookies on the baking sheets for 2 minutes before transferring to wire racks to cool completely.
