Scrambled Eggs With Queso Fresco
Since I learned how to make my own Queso Fresco, I’ve been adding this Mexican cheese to lots of my recipes. These Scrambled Eggs With Queso Fresco make a great fresh, healthy and filling breakfast!
My secret to perfect scrambled eggs is to cook them slowly over low heat. Start by beating eggs in a bowl. Melt butter in a pan and add the eggs. Stir the egg slowly and steadily as it cooks over a low-medium heat. ONce the scrambled egg has formed, add the cheese and cook for another half minute until the cheese is warm. Top these eggs with your favorite toppings or enjoy them as they are!

Wanted to add a few more spices to this dish because I felt it was a little too plain, so I decided to go with oregano and dried parsley.
This dish did not have nearly enough salt as specified in the recipe, after making the scrambled eggs I had to add more salt to it as it tasted plain.
