The recipe calls for a generous amount of extra-virgin olive oil, but don’t be tempted to reduce it. All that olive oil is what actually makes this dish so flavorful and melt-in-your-mouth delicious. If you don’t have in-season tomatoes, swap them out for canned tomatoes. This flavorful dish is great warm or at room temperature. And it will keep in the fridge for up to 3 days. Cook onion

In a large skillet over medium heat, heat ⅓ cup extra-virgin olive oil and add 1 chopped onion. Sauté, stirring occasionally, until translucent and soft, about 5 minutes.

Add potatoes

Add the chopped potatoes and let them heat for 2-3 minutes.

Add green beans

Add 1 pound green beans and toss until covered with olive oil.

Add tomatoes, parsley and seasonings

Add the chopped tomatoes, ¼ cup chopped parsley, 1 teaspoon sugar if using, and ½ teaspoon salt and freshly ground black pepper and mix to combine.

Add hot water

Add enough hot water to just half-cover the green beans.

Simmer

Gently simmer, covered, until there’s no water left and the beans and potatoes are soft, about 40 minutes.

Serve

Serve warm or at room temperature with bread and feta cheese.
