My favorite Strawberry Oatmeal Bars get their perfectly crumbly texture from an almond-flour-rolled oat mixture, giving them a nutty flavor. Using strawberry preserves allows the bottom crust to stay nice and crisp. I also add some extra fresh chopped strawberries in the filling for double the strawberry flavor. These bars are sweet, buttery, and perfect.

You can make these bars using a stand mixer or a hand mixer. First, combine the dry ingredients. Then mix in the softened butter and almond extract until the mixture resembles the coarse sand. Transfer one-half the prepared mixture into a parchment-lined square pan and press down into an even layer. Pre-bake the crust until golden. Spread the strawberry preserves over the crust and top with fresh strawberries. Sprinkle the remaining flour-oat mixture overtop the strawberries. Return to the oven and bake until the top is golden brown. Let cool completely before cutting into bars, then serve. Enjoy!

Steps to make Strawberry Oatmeal Bars

Preheat oven and line baking pan

Preheat the oven to 350 °F and line an 8-inch square baking pan with parchment paper.

Combine dry ingredients

In the bowl of a stand mixer or using a hand mixer, combine 1 ½ cups all-purpose flour, 1 ¼ cups rolled oats, ½ cup ground almonds, ⅓ cup brown sugar, ⅓ cup granulated sugar, ¼ teaspoon baking powder, and ¼ teaspoon salt. Mix until combined, about 30 seconds.

Add butter and almond extract

With the mixer on low, add ¾ cup softened butter and ¼ teaspoon almond extract and mix until it looks like coarse sand, about 2 minutes.

Make bottom crust

Using your hands or the back of a measuring cup, press half of the flour-oat mixture into the bottom of the prepared baking pan.

Pre-bake

Bake the crust for 20 minutes or until golden, then remove from the oven. Keep the oven on.

Add preserves and fresh strawberries

Using an offset spatula, spread ¾ cup strawberry preserves over the pre-baked crust. Add ⅓ cup chopped fresh strawberries on top.

Sprinkle the remaining flour-oat mixture evenly over the strawberry layer.

Bake for 30 to 35 minutes or until the top is golden brown.

Let cool completely before removing from the pan and slicing into bars.
