For the coconut shortbread crust:
- 2 cups All-purpose flour

For the grapefruit filling:
- 6 Large eggsat room temperature
- 2 cups Granulated sugar
- 1-2 Grapefruitlarge, zested & freshly squeezed (you need 1 cup juice & 1½ tablespoons of zest)
- ½ cup All-purpose flour
- ½ tsp Sea saltfine
- ½ cup Whole milk
- 1 cup Shredded coconutunsweetened
Grapefruit Coconut Bars
I love these Grapefruit Coconut Bars which bring a zesty tropical tang to the table. I like to decorate these dessert bars with a coconut design. To get a straight line every time, I take a knife or some other implement with a straight edge. I hold the straight edge above each bar at an angle, while sprinkling with shredded coconut. They look so impressive!
To make these, start by preparing the crust and pressing it into a baking dish. As the crust bakes, I prepare the filling by mixing eggs with sugar and flour. Add grapefruit juice, zest, milk, and salt and beat until smooth. Pour the filling onto the cooled crust and return to the oven to bake again until the filling sets. Leave to cool completely before cutting into squares.Â

Can this be made vegan some how?
Ive made this recipe a couple of times but this time around i decided to add a bit of caramel on to the top id say its a lot more flavorful with some extra sweetness mixed with the grapefruit next i'll try out chocolate.
Made my bottom layer of shortbread crust a little too thick..
Doubled the batch so i'd have a lot more for me and the family!
Easy to make and not too many ingriedients so a lot less work and a good end result would totally recommend it!
Careful with the vanilla extract or you can ruin the entire meal in one go.
Fantastic coconut bars! took some with me on a picnic its a cute small little dessert that last for about a week depending on how many you make.
Huge crowd pleaser made it for a co-workers birthday and brought three batches to work with me it was very appreciated and about half the office asked for the recipe.
My kids gobbled these bars up instantly lol enjoyed every bite thank ya

Wishing that it wasnt only grapefruit i find grapefruit to be very bitter...
Hubby and I loved everything about this except the sea salt it was too distinct go with normal if i were you.

These were sooooo good!!! they are easy to make though i did have to add some extra coconut to mine cause 1 cup barely covered it.
Very sweet but a delicious dessert/snack to serve but i think some filling wouldve been nice too.
Worked out great for me i used coconut milk instead of normal milk though to make it more sweet and have a little more coco taste to it.
