Ingredients

For the coconut shortbread crust:
2 cups All-purpose flour
1 cup Shredded coconut unsweetened
1½ tsp Ground ginger
1 tsp Sea salt fine
1 cup Unsalted butter at room temperature
Âľ cup Granulated sugar
2 tsp Vanilla extract pure
For the grapefruit filling:
6 Large eggs at room temperature
2 cups Granulated sugar
1-2 Grapefruit large, zested & freshly squeezed (you need 1 cup juice & 1½ tablespoons of zest)
½ cup All-purpose flour
½ tsp Sea salt fine
½ cup Whole milk
1 cup Shredded coconut unsweetened

I love these Grapefruit Coconut Bars which bring a zesty tropical tang to the table. I like to decorate these dessert bars with a coconut design. To get a straight line every time, I take a knife or some other implement with a straight edge. I hold the straight edge above each bar at an angle, while sprinkling with shredded coconut. They look so impressive!

To make these, start by preparing the crust and pressing it into a baking dish. As the crust bakes, I prepare the filling by mixing eggs with sugar and flour. Add grapefruit juice, zest, milk, and salt and beat until smooth. Pour the filling onto the cooled crust and return to the oven to bake again until the filling sets. Leave to cool completely before cutting into squares.

Steps to make Grapefruit Coconut Bars

Heat the oven and prepare a baking pan

Preheat the oven to 350 °F. Grease and line a 13x9-inch baking pan with parchment paper.

Mix dry ingredients

Mix 2 cups of all purpose flour, 1 cup of shredded coconut and 1½ teaspoons of ground ginger together in a bowl.

Mix butter and sugar

Beat 1 cup of butter with Âľ cup of granulated sugar on medium-high speed for 3-5 minutes, until light and fluffy. Add 2 teaspoons of vanilla extract and mix until just incorporated.

Add dry ingredients

Add the dry ingredients and combine until the dry ingredients are just incorporated. Do not over mix - you want crumbly dough so it's easier to press into the pan.

Bake

Press the crust into the bottom of the parchment lined pan. Bake in the oven for 15 minutes until the edges turn light golden brown.

Cool crust

Remove the crust from the oven and leave to cool for about 20 minutes.

Reduce oven temperature

Turn the oven down to 325 °F.

Make filling

In a separate bowl, beat 6 eggs lightly. Add 2 cups of granulated sugar and ½ a cup of all purpose flour and whisk until smooth. Add 1 cup of grapefruit juice, 1½ tablespoons of zest, ½ a cup of milk and ½ a teaspoon of salt. Whisk until fully blended.

Add filling to crust

Gently pour the filling over the crust.

Bake

Bake for 20-25 minutes until the center of the filling is just set.

Cool

Once cooked, remove from the oven and leave to cool completely (45 mins - 1 hour).

Slice into bars

Slice into 24 squares and transfer to a wire rack.

Decorate and serve

To decorate, take something with a straight edge (such as a bench knife). Hold the knife just above the bar at an angle from one corner to the opposite one. Sprinkle shredded coconut over the exposed side of the grapefruit bars and repeat.

Ive made this recipe a couple of times but this time around i decided to add a bit of caramel on to the top id say its a lot more flavorful with some extra sweetness mixed with the grapefruit next i'll try out chocolate.
