Cool down with these delicious homemade Apricot Coconut Popsicles! Perfect for summer and healthy too. This easy recipe uses only four ingredients and takes just minutes to whip up. Pull out your food processor and throw in the apricots, coconut milk, honey, and coconut oil, and process until smooth and creamy. Simple! 

This recipe is dairy- and sugar-free and uses raw honey as a sweetener. However, vegans may substitute maple syrup for honey. Once all of the ingredients are blended, add the purée to your popsicle molds and place in the freezer for about 4 hours or until firm. Then enjoy your healthy summer treat!

In a food processor, combine 2 cups pitted and halved apricots, ÂĽ cup coconut milk, 3 tablespoons honey, and 3 tablespoons coconut oil. Process until smooth.

Pour into molds

Pour the apricot mixture into popsicle molds and insert sticks.

Freeze

Freeze for at least 4 hours until the ice pops are solid.
