170 g Self-rising flour
1 tsp Baking powder
1 tsp Vanilla extract
8 Apricots halved
1 tbsp Caster sugar to sprinkle over the fruit
1 tbsp Powdered sugar to serve

This Apricot and Almond Traybake is a no fuss simple sweet treat which you can prepare in just 15 minutes. Apricot and ground almonds make a really nice combination – the sweetness of the apricot sets of the nuttiness of the almond.

To make this traybake, start by creaming butter and sugar together. Add eggs and gently fold in the flour and ground almonds. Transfer to a baking pan and press apricot halves into the top. Sprinkle with sugar and bake in the oven until cooked. Enjoy with coffee or tea!

Steps to make Apricot and Almond Traybake

Heat oven and prepare baking dish

Preheat the oven to 355 °F. Lightly grease a baking dish with cooking spray.

Cream butter and sugar

Cream 220 grams of butter and 220 grams of sugar together in a large bowl.

Add eggs

Add 4 eggs one by one, mixing well after each addition.

Add flour, almonds, baking powder and vanilla

Fold in 170 grams of flour, 50 grams of ground almonds, 1 teaspoon of baking powder and 1 teaspoon of vanilla extract and mix until just combined.

Transfer the mixture to the baking dish

Transfer the mixture to the prepared baking dish.

Top with apricots and sugar

Smooth the top and press the almonds into the cake mixture. I usually make a pattern of every other one turned up and one face down. Sprinkle with caster sugar to sweeten the fruit.

Bake for 35-40 minutes until golden brown on top and a toothpick inserted comes out clean.

Cool traybake

Leave the traybake cool on a wire rack.

Cut into squares

Sprinkle with powdered sugar and cut into squares.

Serve with morning coffee or afternoon tea.
