1 ½ cups Greek yogurt
½ cup Mayonnaise
1 ½ cups Cheddar cheese shredded, reserve some for garnish
1 oz Dry ranch dressing mix
1 bunch Green onion chopped, reserve some for garnish
Salt to taste
Black pepper to taste

Sweet corn, tomatoes with green chilies, Greek yogurt, mayo, Cheddar cheese, and green onions are all mixed into the creamiest dip that takes just a few minutes to prepare and will have your guests asking for the recipe. Serve this up with corn tortilla chips on the side for scooping.  

This recipe is super simple to prepare. Just mix everything in a large bowl, then season with salt and black pepper to taste. You can serve this dip immediately after mixing all the ingredients together. However, this dip tastes even better if you make it ahead and refrigerate it covered for at least an hour so the flavors have time to blend. Garnish the dip with shredded Cheddar and chopped green onions, and serve. Enjoy!

Combine ingredients

In a large bowl, combine 30 ounces canned corn with poblano and red pepper, 20 ounces canned diced tomatoes with green chilies, 1 ½ cups Greek yogurt, ½ cup mayonnaise, 1 ½ cups shredded Cheddar cheese, 1 ounce Ranch dressing mix (dry mix), 1 bunch chopped green onions. Reserve some cheese and green onions for garnish. Season with salt and black pepper to taste.

Chill until ready to serve.

Just before serving, garnish the dip with the reserved cheese and green onions. Serve with corn tortilla chips or your favorite dippers.
