2 Beets medium or 3 small
Sea salt to taste
5 oz Feta cheese
3 ½ oz Greek yogurt
1 tbsp Lemon juice
1 tbsp Red wine vinegar
½ tbsp Date molasses
½ tbsp Olive oil extra-virgin, plus extra for drizzling
3 tbsp Pistachio nuts roughly chopped
2 tbsp Dill chopped
Black pepper freshly ground

This super simple recipe for Whipped Feta Dip with Beets is a delicious Mediterranean-inspired snacking dip that relies on simple ingredients to deliver a big flavor. Creamy whipped feta cheese topped with quickly marinated beets and garnished with chopped pistachios and a sprinkling of fresh dill makes for the perfect party appetizer. I like it with fresh flatbread or whole-wheat pita.

Best of all, the recipe is simple and can be made ahead and will keep in the refrigerator for up to 3 days. When making this recipe ahead of time, prepare the whipped feta mixture and refrigerate it in an airtight container. Separately, mix the beets with vinegar, molasses, and oil in a bowl and refrigerate. Then, before serving, toss the beets with the marinade from the bowl. Finally, spoon the whipped feta on a serving platter and top with beets, pistachios, and dill, and it’s ready to be served and enjoyed!

Steps to make Whipped Feta Dip with Beets


Cook beets


Halve the beets and place them in a pan of boiling, salted water. Cook until tender, about 30 minutes. Drain and set aside to cool.


Combine feta, yogurt and lemon juice


In the meantime, combine 5 ounces feta cheese, 3 ½ ounces Greek yogurt, and 1 tbsp lemon juice in a small food processor.




Process for a few minutes until creamy and smooth, scraping down the sides with a spatula as needed. Set aside.


Make dressing for beets


In a medium bowl, whisk together 1 tablespoon red wine vinegar, ½ tablespoon date molasses, and ½ tablespoon extra-virgin olive oil.


Chop beets


When cool enough to handle, peel the beets and chop them into bite-sized cubes.


Marinate beets


Toss the beets with marinade and let stand for 5 minutes.



Spoon the whipped feta on a serving platter and top with marinated beets. Sprinkle with chopped pistachios and fresh dill. Add a drizzle of olive oil and a few grinds of black pepper and serve.
