Finally, spoon the whipped feta on a serving platter and top with beets, pistachios, and dill, and it’s ready to be served and enjoyed!

Steps to make Whipped Feta Dip with Beets

Cook beets

Halve the beets and place them in a pan of boiling, salted water. Cook until tender, about 30 minutes. Drain and set aside to cool.

Combine feta, yogurt and lemon juice

In the meantime, combine 5 ounces feta cheese, 3 ½ ounces Greek yogurt, and 1 tbsp lemon juice in a small food processor.

Process for a few minutes until creamy and smooth, scraping down the sides with a spatula as needed. Set aside.

Make dressing for beets

In a medium bowl, whisk together 1 tablespoon red wine vinegar, ½ tablespoon date molasses, and ½ tablespoon extra-virgin olive oil.

Chop beets

When cool enough to handle, peel the beets and chop them into bite-sized cubes.

Marinate beets

Toss the beets with marinade and let stand for 5 minutes.
