For whipped feta:
8 oz Feta cheese
½ cup Greek yogurt plain
2 tbsp Olive oil plus more for serving
Black pepper to taste

Crusty bread like sourdough or baguette

Preheat oven

Preheat the oven to 350 ℉.


Combine balsamic vinegar and honey


In a small bowl, whisk together 2 tablespoons balsamic vinegar with 2 teaspoons honey.


Prepare strawberries


Spread 2 pounds sliced strawberries on a large baking sheet. Drizzle the balsamic honey mixture over the strawberries and toss to coat. Spread the strawberries in an even layer and roast for about 30-35 minutes or until the strawberries start to soften and release their juices.


Combine feta, yogurt, and olive oil


Meanwhile, combine 8 ounces feta cheese, ½ a cup plain Greek yogurt, 2 tablespoons olive oil, and black pepper in a food processor.




Blend for a few minutes until creamy and smooth, scraping down sides with a spatula as needed. Transfer to the fridge to chill for 30-60 minutes.


Chill strawberries


Once the strawberries are roasted, remove them from the oven and let cool on the baking sheet for 5-10 minutes. Then transfer the strawberries to a container and chill in the fridge until ready to serve.



To serve, spoon the strawberries over the whipped feta. Garnish with basil chiffonade, a drizzle of olive oil, and more black pepper. Serve with toasted crusty bread for dipping, and enjoy!

Delightful mix of tangy feta with sweet roasted strawberries and a dash of basil. And so pretty!

I tried to submit a photo but the site won’t accept it. I didn’t have a big enough appealing bow so I made individual crackers with cheese, strawberry, and a basil, with basil sprigs for garnish.
