These truffles also remind me of Raffaello coconut candies. Except these contain no chocolate, and you will only need four simple ingredients to make them. The texture of these truffles is creamy and soft with a little crunch due to the coconut.
This recipe is kid-friendly – you can easily get the little ones involved in the kitchen. It’s so funny! Besides, this recipe is great for working on fine motor skills by rolling bunny tails up. To make the Easter Bunny Tail Truffles, you will need the following ingredients:
Make sure your cream cheese is softened and at room temperature. In a bowl of a stand mixer, using a paddle attachment, beat on low speed 1 (8-oz) package cream cheese until light and fluffy. About 5 minutes.
Add 1 teaspoon almond or coconut extract and powdered sugar 1 cup at a time until the mixture is thick as a dough. If you can shape the mixture in a 1-inch ball, then it is ready.
Shape the cream cheese mixture into 1-inch balls. Roll each ball in coconut and place on a serving plate.
Chill before serving and enjoy!
