Recipe Description

These Garlic Roasted Potatoes are the perfect side for almost any dish. They are super garlicky and because you leave the skin on, they are crisp on the outside and soft and fluffy on the inside! My mouth is watering just thinking about these delicious hasselback potatoes.

Start by slicing the potatoes horizontally, hasselback style. Make a coating for the potatoes by combining butter, olive oil, garlic, salt, cayenne pepper and black pepper. Coat the potatoes with this garlic oil and roast for 30-35 minutes, turning and basting once during the cooking time.

    Heat the oven and prepare a roasting pan

    Preheat the oven to 425 °F and lightly spray a roasting dish with cooking spray.

    Place each of the potatoes on a wooden spoon. Slice them horizontally using the spoon as a guide.

    Combine 2 tablespoons of butter, 2 tablespoons of olive oil, 4 minced cloves of garlic, a pinch each of salt, cayenne pepper and 3 dashes of black pepper together in a large bowl. Stir well to combine.

    Add the potatoes to the bowl and toss well with the garlic mixture until evenly coated.
