Garlic Roasted Potatoes
These Garlic Roasted Potatoes are the perfect side for almost any dish. They are super garlicky and because you leave the skin on, they are crisp on the outside and soft and fluffy on the inside! My mouth is watering just thinking about these delicious hasselback potatoes.
Start by slicing the potatoes horizontally, hasselback style. Make a coating for the potatoes by combining butter, olive oil, garlic, salt, cayenne pepper and black pepper. Coat the potatoes with this garlic oil and roast for 30-35 minutes, turning and basting once during the cooking time.

Made this for dinner with cheesy garlic bread and sirloin steak strips and my husband fell in love with me all over again just because of this delicious meal!
Turned out really dry even with sour cream and the skin was burnt tasting. I made it again and removed the skin this time and then it turned out to be good.
Would recommend putting some cheese on the top while hot and let it melt along with some butter.. absolute heaven.

Had it with some red wine on the side and of course some tasty bacon bits with sourcream and a little paprika spice on the top.
It's alright for a snack but it's definetly missing some stuff, so i added bacon bits to mine and made some grilled chicken wings to go along with it.
Took no time at all for me, it was actually less than 50 minutes in my case so really happy about that not only was the time cut short but it was also very delicious.
Going to be making this a lottt more often, so tasty and the potatos melt in your mouth.

My kids favorite type of potato, it's always "no mom i want the roasted one with garlic" so much for the easy mashed potatos with bacon bits, though i love this recipe too so I can't complain too much.
