Ingredients

8 cups cold Water
â…“ cup Sour cream
3 tbsp White wine vinegar divided
2 tsp Salt
3 tbsp Dill fresh or frozen, chopped
½ cup Green onion finely chopped
½ lb Ham chopped
5 medium Potatoes peeled and diced in ¼-inch cubes
3 Eggs
4 Cucumbers diced

Okroshka – Russian Summer Soup

Feel no guilt with this Russian inspired Okroshka, most commonly described as a light and cool, cold Summer soup. Using a sour cream base seasoned with salt and vinegar and filled with chopped dill, green onion and diced ham, cooked potatoes, hard-boiled eggs and cucumbers for some crunch.

It’s absolutely fabulous and all your easy to make family dinner, needs.

To make Okroshka, you will need the following ingredients:

Steps to make Okroshka – Russian Summer Soup

Boil potatoes

In a medium pot, place diced potatoes in water and 1 tablespoon vinegar and bring to a boil. Boil until the potatoes are cooked, but not falling apart.

Drain

Once cooked, drain well and set aside to cool.

Boil eggs

In a pot of water, boil 3 eggs until hard-boiled, then remove from heat and cool in ice water.

Prepare soup ingredients

Place the peeled, diced eggs, cucumbers, chopped ham, dill and green onions in a large pot or bowl.

Prepare sour cream base

In a separate bowl, stir the 8 cups cold water, sour cream, 2 tablespoons vinegar and salt together until mixed.

Prepare Okroshka

Add the mix to the bowl of soup ingredients. Stir to mix through.

Serve

Serve immediately.
