These Chicken and Mushroom Patties (Russian Kotlety) are juicy and tasty and super versatile. These patties are perfect with mashed or baked potatoes. Sometimes I serve them as mini chicken burgers with pickles and salad on the side.
To make these delicious chicken and mushroom patties, start by sauteing mushrooms. Mince them in a food processor. Combine the mushrooms with ground chicken, grated onion, eggs, bread crumbs and season to taste with salt and pepper. Shape the mixture into oval patties. To cook, heat oil in a nonstick skillet. Once hot, add the patties in batches. Cover the pan and cook until golden on both sides. Remove to a plate and serve warm.
