In another medium pot, whisk egg yolks and sugar together until combined.

Add flour and vanilla and whisk to combine.

Add warm milk and cream mixture and place pot over low heat. Continuously whisk until cream has thickened.

Pour into a glass bowl, cover tightly with plastic wrap, leave at room temperature for 20 minutes and then refrigerate for 3 hours.

With a sharp knife, slice the puff pastry into 16 equal squares and pierce each square with a fork a few times. Sprinkle sugar over the top.
