I made it in just about twenty-five minutes, and that includes the time I added to chill the salad to allow the flavors to meld, mingle and develop. The first thing you are going to do is whisk your dressing directly in a salad bowl. Then you’re going to pile your pineapple cubes, diced cucumbers and red onions, and chopped cilantro. Toss well and chill for 20 minutes. Give the salad a good stir before serving, and enjoy!

Prepare dressing

In a large bowl, whisk 2 tablespoons honey with 2 tablespoons rice wine vinegar, 1 tablespoon fresh lime juice, ¼ teaspoon chili oil, and ½ teaspoon kosher salt until well combined.

Add remaining ingredients

Add in 1 ½ cups diced fresh pineapple, 1 cup diced seeded Persian cucumber, ½ cup diced red onion, and ¼ cup chopped fresh cilantro and toss to coat well.

Cover and transfer to the fridge for 20 minutes to let the flavors meld.

To serve, give the salad a good stir, taste and adjust seasonings if needed. Enjoy!
