    Instant Pot Coconut Brown Rice

Learn how to make the Instant Pot Coconut Brown Rice recipe and enjoy your favorite Asian flavors in a healthier way. Though the most common version of the famous coconut rice recipe uses white rice, this one is heartier and higher in fiber and protein, thanks to brown rice. Plus, this simple recipe combines just 4 ingredients to result in a lovely and flavorful side dish that will liven up any meal. Now that’s a win-win!

To keep things easy and simple, I prefer to make brown rice in the Instant Pot. It delivers perfectly cooked fluffy rice every time, and it’s hard to mess up. Just add all of the ingredients to your Instant Pot and let it do its work. This recipe yields 6 servings, so it’s great for a Sunday meal-prepping session. The leftover coconut milk brown rice keeps well in an airtight container in the refrigerator for up to 5 days.
