We love this Whole Wheat Spaghetti with Broccoli, Chilli and Lemon recipe. It’s 100% vegan. It is super healthy and full of flavor. The combination of broccoli, lemon and the slight heat from the chilli is a real winner. I always use whole wheat spaghetti for this as it’s healthier and I prefer it, but you could easily substitute it if you prefer normal spaghetti. 

It is so simple to whip up this dish which makes it a great midweek recipe. Start by cooking the spaghetti according to the package directions. As the pasta cooks, sauté some garlic in olive oil and add a large pinch of chilli. If you like a lot of heat, add extra chilli. Once the spaghetti is cooked, add it to the pan along with the broccoli, juice and zest of a lemon and salt. Mix well and there you have it. Delicious vegan food in only 20 minutes.

Steps to make Whole Wheat Spaghetti with Broccoli, Chilli and Lemon

Cook the spaghetti

Cook the spaghetti according to the package directions.

Add broccoli to pasta

Add the broccoli to the spaghetti for the last 2 minutes of cooking. Drain well and reserve 1 cup of pasta water.

Sauté garlic

Pour 2 tablespoons of olive oil into a large frying pan. Sauté 2 sliced cloves of garlic gently for 2-3 minutes

Add chilli

Add a large pinch of chilli flakes. Stir well and cook for one more minute.

Add spaghetti, broccoli and lemon

Add the spaghetti to the pan with the garlic and chilli. Mix in 300g broccoli, the zest and juice of one lemon. Season to taste with salt.

Add cooking water

Pour in 2-3 tablespoons of the spaghetti cooking water and toss everything together.

Serve

Serve the dish in warmed pasta bowls. Top with some freshly chopped herbs if you like.
