
This Fresh Broccoli and Apple Salad with Walnuts is an absolutely wonderful salad to make when you are looking for something fresh, healthy and full of vitamins. As you’ll know from reading some of my other recipes, I am a big fan of broccoli. This crisp green vegetable is a fantastic source of Vitamin C and it also provides potassium and fiber. This salad is always one of my January go-to recipes to help me get over the excesses of the holiday season!
It’s so quick and easy to assemble too. You will barely even have to turn on the stove. Start by toasting some walnuts over medium-high heat. Assemble the salad ingredients in a large salad bowl. Make a lemon dressing from mayo, sour cream, lemon juice and some sugar, salt and pepper to taste. Combine the salad with the dressing and serve!
