To make this delicious watermelon salad, start by boiling balsamic vinegar to make the balsamic reduction. Season chicken and grill on a hot skillet. Once the chicken is cooked, leave to rest for 5 minutes before chopping into cubes. Assemble the salad by layering spinach with grilled chicken, watermelon, blue cheese, almonds. Dress the salad with balsamic reduction and extra olive oil to taste.

Place 1 cup of balsamic vinegar in a small saucepan. Bring to a boil. Once boiling, reduce heat and simmer for 15-20 minutes until reduced and becoming syrupy.

Heat a grill or nonstick skillet over high heat.

Season the chicken on both sides with all purpose seasoning. Drizzle all over with 1 tablespoon of olive oil.

Transfer the chicken to the hot grill. Cook until cooked through and browned all over. Remove from the pan and leave to rest for 5 minutes before cutting into small cubes.

Take your favorite salad bowl. Layer the ingredients starting with 4 cups of spinach, cooked chicken, 2 cups of watermelon cubes, ½ cup of blue cheese, ¼ cup of almonds.
