4 cups Watermelon chunks, about 1-inch cubes
3 cups Arugula
4 ounces Feta cheese
¼ cup Fresh mint, Basil leaves, Oregano chopped, reserve a few whole leaves for garnish
3 tbsp Olive oil
1 medium Lemon zest
1 tbsp Lemon juice
Black pepper freshly ground
to taste Kosher Salt optional

Prepare dressing


In large bowl whisk the olive oil, lemon zest, lemon juice and mint or herbs of choice, until combined.


Add watermelon


Add watermelon chunks and gently mix to coat in the prepared salad dressing.


Add salad ingredients


Add feta cheese, arugula leaves and ground black pepper. Toss gently to combine all the ingredients together.



Season with salt, if needed.



Serve chilled and enjoy!
