1 tbsp Olive oil
3 Shallots diced
1 bunch Green onion chopped, green and white parts divided
4 cloves Garlic minced
2 tbsp Ginger fresh, minced
5 ½ cups Chicken broth low-sodium, vegetable broth or water for vegan
2 Star Anise whole
2 tbsp Soy sauce or tamari
10 oz Cremini mushrooms sliced
6 oz Rice noodles
1 ½ heads Baby bok choy roughly chopped
Salt to taste
For topping:
1 tsp Sesame seeds
Red pepper flakes optional, to taste
For garnish:
Cilantro leaves, optional

This Bok Choy Soup is scrumptious and flavorful and doesn’t take much time to put together. Besides, this simple recipe proves that leafy greens really can be delicious. Inspired by the flavors of Asian cuisine, this noodle soup is subtly spiced with ginger, garlic, and star anise. And what I love most is that this recipe combines simple ingredients and tons of flavor.

In this recipe, I call for chicken broth, but you can keep it vegan and skip the chicken broth. I often make this soup using vegetable broth or just water, and it is still so hearty, filling, and delicious. Garnish with chopped green onions, red chili flakes to add a touch of heat if you wish, and sesame seeds and you are ready to go!

Steps to make Bok Choy Soup

Cook shallots

In a medium-sized pot over medium heat, heat 1 tablespoon olive oil and add 3 diced shallots. Cook, stirring often, for about 4-5 minutes or until translucent and soft.

Add green onions, garlic, and ginger

Add the white parts of green onions, 4 minced cloves garlic, and 2 tablespoons minced ginger and cook, stirring occasionally, for about 1-2 minutes.

Add broth

Pour in 5 ½ cups broth or water and bring to a simmer.

Add star anise and soy sauce

Add in 2 star anise and 2 tablespoons soy sauce, then cover and simmer for 10 minutes more.

Remove star anise

Remove and discard the star anise.

Add mushrooms, noodles, and bok choy

Add 10 ounces sliced cremini mushrooms, 6 ounces uncooked rice noodles, and 1 ½ heads baby bok choy. Simmer for about 5 to 8 minutes or until noodles are tender.

Remove from the heat and season with salt to taste.

Serve

Serve in bowls garnished with the green parts of green onion, sesame seeds, red pepper flakes, and cilantro leaves if desired.
