1 large Jalapeño pepper 3-inch long, seeded and quartered vertically
1 tbsp Unsalted butter
3 Carrots small, peeled and sliced
2 medium stalks Celery sliced
1 tsp Celery leaves chopped
3 cups Turkey leftovers, chopped
4 ½ oz Egg noodles regular or gluten-free
Salt to taste
Black pepper to taste

It is also great for a last-minute meal as you only need a few pantry and fridge staples. The recipe yields six main dish servings or serves eight as a hearty starter at your next gathering. 

Start with the stock. Add the homemade chicken or turkey stock and quartered jalapeño pepper to a large pot and bring to a boil. Simmer the stock for 10 minutes. Meanwhile, sauté the carrots and celery, then add in the chopped turkey and let heat through. Add the turkey and vegetable mixture to the stock and simmer for another 5 minutes. Finally, add the egg noodles and simmer until soft. Once the soup has finished cooking, remove the jalapeño and adjust the seasoning. Serve hot and enjoy!

Steps to make Jalapeno Turkey Noodle Soup

Simmer stock and jalapeño pepper

To a large pot, add 8 cups homemade turkey or chicken stock, or a combination of both, and 1 seeded and quartered jalapeño and bring it to a boil. Reduce the heat and simmer for 10 minutes. Taste the stock during the cooking process and remove the jalapeño pepper once the soup is spicy enough for you.

Sauté carrots and celery

In a large skillet over medium-high, melt 1 tablespoon unsalted butter. Add 3 sliced carrots, 2 sliced celery stalks, and celery leaves and sauté until the vegetables begin to soften, about 5 minutes.

Add turkey

Add 3 cups chopped turkey to the skillet and sauté for 3 minutes more.

Add turkey mixture to stock

Add the turkey and vegetable mixture to the stock and simmer over medium-low heat for 5 minutes.

Add noodles

Add 4 ½ ounces egg noodles and simmer over medium heat until the noodles are soft and cooked, about 10-15 minutes.

Remove jalapeño and season to taste

Remove the jalapeño quarters. Taste and add salt and black pepper if needed.
