To a large pot, add 8 cups homemade turkey or chicken stock, or a combination of both, and 1 seeded and quartered jalapeño and bring it to a boil. Reduce the heat and simmer for 10 minutes. In a large skillet over medium-high, melt 1 tablespoon unsalted butter. Add 3 sliced carrots, 2 sliced celery stalks, and celery leaves and sauté until the vegetables begin to soften, about 5 minutes.

Add 3 cups chopped turkey to the skillet and sauté for 3 minutes more.

Add turkey mixture to stock

Add the turkey and vegetable mixture to the stock and simmer over medium-low heat for 5 minutes.

Add noodles

Add 4 ½ ounces egg noodles and simmer over medium heat until the noodles are soft and cooked, about 10-15 minutes.
