Chicken Broccoli and Mushroom Stir Fry is one of my favorite midweek dinners. I make this when I get a craving for Chinese food. Have you ever ordered takeout and when you tasted it, realised that you could have made a much nicer dish yourself? Me too! And that’s when I decided to develop this stir fry recipe. The sauce tastes better than my local Chinese restaurant!
Start by coating the chicken in flour and stir frying it in a wok until it is evenly browned. Make a sauce by whisking flour, chicken stock or broth, honey, soy sauce, ginger, garlic and sesame oil in a bowl. Once the chicken is cooked, transfer it to a plate and cook the broccoli and mushrooms in the same wok. Add the sauce and bring it to a boil. Once it thickens, add the chicken and heat through. Serve with rice and enjoy!
To make my Chicken Broccoli and Mushroom Stir Fry, you will need the following ingredients:
Pat the chopped 1lb of chicken breast dry with paper towels. Toss the chicken pieces with ¼ cup of flour until each piece is evenly coated. Place the coated chicken on a plate and save the remaining flour for the sauce).
Pour 1 cup of chicken stock into the bowl with the flour. Add ¼ cup of honey, ¼ cup of soy sauce, ½ tbsp of grated ginger, 2 cloves of grated garlic and 2 tsp of sesame oil to the bowl and whisk until very smooth.
Add 1 tbsp of olive oil to a large wok or skillet and heat over medium-high. Add chicken pieces and spread them out in an even layer. Cook the chicken for a minute before stirring, then stir fry for 5 minutes until evenly browned. Remove the chicken from the wok and set aside.
Add 1 more tablespoon of oil to the same wok or skillet and heat. Add 1 ¼ lb of broccoli florets, 1 small sliced onion and ¾ lb of sliced mushrooms to the hot oil and stir fry for 4 minutes until the mushrooms are soft and the broccoli is crisp-tender.
Whisk the sauce once more in the bowl before pouring it over the vegetables. Bring the sauce to a boil over medium heat, stirring constantly.
Simmer the sauce for 2 minutes until it thickens. Then add the chicken and cook for about 30 seconds until heated through. Taste and season with salt if necessary.
Serve this delicious stir fry with steamed white rice.
