I use it in so many of my dishes, it really lifts a pasta bake and is perfect for sprinkling over pizza. With meat, it just adds a classic Italian twist, elevating a simple dish into something special.

This recipe is incredibly simple. Chicken thighs, plus four classic Mediterranean ingredients. The key is to rub the chicken with the herbs and seasoning, and then to keep it basted while it’s cooking. This way you make sure the meat absorbs all the great flavors, and stays juicy and moist while in the oven.

Heat the oven and prepare a baking dish

Preheat oven to 450°F. Lightly grease a rectangular baking dish.

Prepare the chicken

Wash the chicken thighs under running water and pat dry with paper towels.

Make the oregano rub

In a small bowl, combine the oregano with the salt and pepper.
