Colcannon Irish Mashed Potatoes with Kale

This easy Colcannon Irish Mashed Potatoes with Kale recipe combines two staples of Irish cuisine: potatoes and kale into a delicious and filling dish. And it’s not only for St. Patrick’s Day. It’s pretty perfect any time of the year and my family really loves it.

This version of mashed potatoes is not only flavorful and satisfying, but it is healthy, too, because these mashed potatoes have greens in them. From start to finish, this kale colcannon recipe takes about 30 minutes, and yields two hefty servings. Starchy and creamy Russet potatoes work best here, as do Yukon Golds. This dish is commonly paired with Irish bacon or ham. I like it with Beef & Vegetable Casserole.
