5-6 Potatoes medium, peeled and cut in half
4 cups Water
1 tbsp Olive oil
100 g, 4 leaves Kale stems removed, chopped
1 tbsp Leek chopped
3 Green onion chopped
1 pinch Ground nutmeg
1 clove Garlic minced
40 g Butter
50 ml Milk
2 tsp Salt
1 tsp Black pepper

This easy Colcannon Irish Mashed Potatoes with Kale recipe combines two staples of Irish cuisine: potatoes and kale into a delicious and filling dish. And it’s not only for St. Patrick’s Day. It’s pretty perfect any time of the year and my family really loves it.  

This version of mashed potatoes is not only flavorful and satisfying, but it is healthy, too, because these mashed potatoes have greens in them. From start to finish, this kale colcannon recipe takes about 30 minutes, and yields two hefty servings. Starchy and creamy Russet potatoes work best here, as do Yukon Golds. This dish is commonly paired with Irish bacon or ham. I like it with Beef & Vegetable Casserole. Steps to make Colcannon Irish Mashed Potatoes with Kale


Boil potatoes


Place 5-6 peeled and cut in half potatoes in a pot, cover with 4 cups cold water and bring to a boil. Cook for 20 minutes or until easily pierced with a fork.


Cook kale


Meanwhile, in a skillet, heat 1 tablespoon olive oil and add 4 chopped kale leaves, 1 tablespoon leeks, 3 chopped green onions, 1 pinch ground nutmeg, and 1 minced garlic clove. Sauté, stirring, until the kale is tender, about 5 minutes.


Drain potatoes


Drain off the water, return the potatoes to low heat, and let all the liquid evaporate for about 2 minutes. Then remove from heat.




Add 40 grams butter and mash with a potato masher, slowly adding 50 milliliters milk, until creamy.


Season and add kale mixture


Add 2 teaspoons salt and 1 teaspoon black pepper. Mash the kale mixture into potatoes until smooth.



Serve hot and enjoy!
