I absolutely adore these Cranberry Nut Muffins. They contain two of my favorite things – cranberries and pecan nuts. Did you know that cranberries are a superfood? Yes indeed, these small, hard, round, red fruits have numerous health boosting benefits. They are high in antioxidants and they can even lower blood pressure. I try to include them in my cooking whenever I can!

I love a simple recipe, don’t you? This one is one of the easiest muffin recipes ever. You cannot mess this up! Start by preparing a muffin tray. Then mix the dry ingredients together in a mixing bowl. Beat the eggs in a separate bowl and add vegetable oil and orange juice. Mix the wet ingredients into the dry ingredients and stir until just combined. Add the pecan nuts and cranberries. Drop the batter into the muffin cups and bake. Enjoy!

Steps to make Cranberry Nut Muffins

Heat the oven and prepare a muffin tray

Preheat the oven to 375 °F. Lightly grease a 12 cup muffin tray and line with paper muffin cups.

Combine dry ingredients

Mix 2 cups of flour, ¾ cup of packed brown sugar and 2 teaspoons of baking powder in a large bowl.

Beat eggs

Beat 2 large eggs in a separate bowl.

Mix wet ingredients with the eggs

Add â…” cup of orange juice and â…“ cup of vegetable oil with the beaten eggs.

Add wet ingredients to dry ingredients

Pour the wet ingredients into the bowl with the dry ingredients and stir until they are just combined and you have a lumpy batter.

Add the nuts and berries

Fold in one cup of coarsely chopped cranberries and one cup of chopped pecans.

Add the batter to the muffin trays

Spoon the batter into the muffin trays until each muffin cup is almost completely full.

Bake for about 25-35 minutes until golden brown on top.

Cool

Cool the muffins on a wire rack.

Serve

Serve these muffins while they are still warm with a cup of your favorite tea or coffee.
